It’s just after 9pm on Sunday evening, and I could not be more exhausted.
Comparatively, my normal Sunday, consisting of nine hours in a local shop is a walk in the park.
Instead, today I cleaned, prepped the house, and made a meal plan for the week. Normally, food shopping for the week is scatter-brained and a few last-minute recipe ideas. Today, it was a calculated, we-probably-should-shop-at-Costco excursion.
When the time comes, I will be an out-of-this-world mom!
One of The Man’s snacks for the academy are these tasty Coconut-Peanut Butter Granola Bars from The Ambitious Kitchen. The only alteration I made was removing the dark chocolate coating, and traded almond butter for chunky peanut butter. It was delicious.
Then I made homemade strawberry-blueberry fruit leathers. I’ve seen recipes before, but I made a new version. All I did was blend 1.5 pounds of a combination of strawberries (hulled) and blueberries, along with about a half a cup of honey. Then simmer it over a medium flame for 30 minutes. Then you spread that out on tinfoil and bake at 200 degrees for three hours!
The fruit leathers came out with the perfect amount of sweet! I hope it gives The Man enough energy for the day!
Normally, I can put together two recipes, but between these two and the tuna salad for the first few days, I am burned out!
The academy begins tomorrow, and I’ve already cried rivers, arranged my home to accommodate all these new tools and books, and made homemade snacks worthy of a Wife-of-the-Year award!
I wish my love all the luck in the world tomorrow. For him, and only him, I am willing to bake and prep until I’m falling down tired. Which I am… so Goodnight.
